Chicken Fajita and Cheese Quesadillas

   Last night we had a lovely chicken fajita but as we made too much I decided to use the leftover for lunch today. Oh I do like some good leftovers. This recipe is so easy it literally takes 10 minutes to make. You can replace the chicken with mushrooms, peppers, salami, ham or other leftover meats.

   - 2 plain tortilla wrap
   - 100 g mild cheddar cheese
   - 100 g leftover chicken fajita

Grate the cheese and chop the chicken. 

Place one of the wraps in a pan over a low heat, sprinkle the cheese and chicken and cover with the other tortilla wrap.

Warm the quesadilla for about 2 minutes on each side or until the cheese is melted.
