Cream Cheese And Strawberry Pastries

Hello Breakfast!!! Hello Coffee!!! These pastries are super easy to make and soo yummy. You can replace the strawberries  with blueberries or raspberries.

   - 1 sheet of puff pastry
   - 230 g cream cheese
   - 55 g caster sugar
   - 1 tsp vanilla extract
   - 5-6 strawberries

Mix the cream cheese with the caster sugar and the vanilla extract until is well combined and it has a creamy texture. Cut the pastry into squares about 10 X 10 cm and fold the square so that you get a triangle. (see pic below)

Cut the pastry as shown in the picture below making sure you DON'T cut right up to the top corner.

Undo the pastry so that you get a square again. Now this is when it gets complicated to explain so bare with me. Trust me is not that complicated and I hope the pictures help. So here we go: take the left corner and fold it so that it covers the left corner of the square in the middle then do the same with the right corner.

Add a tbs of cream cheese in the middle of the pastry and place half or 1/4 of a strawberry on top depending how big you strawberry is, pressing it down in the cream.

Bake in the hot oven at 200 C for 15-20 minutes or until golden brown. I have to admit I was pleasantly surprised with the final result, they look and taste amazing.
