Christmas Biscuits

   I absolutely love these biscuits. They are crispy, delicate and yet full of flavor. Perfect recipe for Christmas. I always get the little one to help with the decorations so they are a big hit in our house.

   - 100 g butter
   - 100 g caster sugar
   - 1 egg
   - 1 tsp vanilla extract
   - 275 g plain flour

   To decorate:
   - 200 g icing sugar
   - 3-4 tbsp of cold water
   - 2-3 drops food coloring

Cream the butter and caster sugar until pale, light and fluffy.

Beat the egg and the vanilla extract then add it to the butter mixture until well combined.

Stir in the flour and mix until it comes together as a dough.

Roll the dough on a lightly floured surface to the thickness of 1 - 1.5 cm.

Using biscuits cutters, a glass or a knife cut the biscuits and carefully place them on a baking tray lined with parchment paper.

Bake in the hot oven at 190C/375F/Gas 5 for about 8-10 minutes or until golden brown.

Set aside on a cooling rack until cool. In the meantime prepare the icing by putting the icing sugar in a bowl and add the cold water one spoon at a time until you get a smooth cream. Decorate as pleased.
