Carrot Cake

A very autumny cake, lovely, moist, fragrant and easy to make. Great to get your hands dirty it with the kids on a frosty Sunday afternoon. 

kcalorii: 265, proteine: 3g, carbs: 39g, grasimi: 12g, saturates: 2g, fibre: 1g, zahar: 24.8g, sare:0.41g

   - 175 g brown sugar
   - 175 ml sunflower oil
   - 3 eggs
   - 140 g carrots (about 3 big carrots)
   - 100g currants
   - orange zest
   - 175 g self raising flour
   - 1 tsp baking powder
   - 1 tsp cinnamon
   - 175 g icing sugar and a tbsp orange juice for the icing

  • In a big bowl add the: slightly beaten eggs, brown sugar,oil, currants, grated carrots and orange zest and mix until all the ingredients are well combined.

  • Mix the flour with the baking powder and cinnamon then fold it in the carrot mixture until is well combined and you have no lumps.

  • Pour the cake mixture in a cake tin lined with grease proof paper and bake in the preheated oven at 180 C/gas mark 4 for 40-45 minutes.

  • When the cake is done, leave it to cool down in the tray for about 5 minutes then take it out and leave to cool completely.

  • While your cake is cooling, make your icing by pouring the orange juice on top of the icing sugar and mix well. Decorate your cake when cooled, cut as desired and serve!!
