Frittata With Spinach And Chorizo

        A delicious and healthy recipe, great for breakfast or why not even for a snack during the day. You can substitute the vegetables according to preference or season.

   - 3 eggs

   - spinach, boiled and chopped
   - 50g cheese
   - 4-5 slices of chorizo
   - 2 spring onions
   - 5 cherry tomatoes
   - 6 tbsp milk
   - 8 sliced black olives
   - salt and pepper

        Cut the onions, boil drain and chop the spinach and grate the cheese. Slice the tomatoes, cut the chorizo in small cubes and fry it in a bit of oil for 2-3 minutes on a low heat.

        Beat the eggs with a pinch of salt and pepper then add the milk, vegetables and cheese with the fried chorizo ​​and sliced ​​olives then mix well.

        Heat up a bit of oil in a pan that you can use under a grill or in the oven, I used a Yorkshire pudding tray and made 4 mini frittata's, Pour the eggs in the pan and let it set.

         Place the pan under the grill or put it in the oven on a low heat until the eggs are done and you have a golden and crispy top.

        When done place them on a paper towel to remove the extra oil and serve with your favourite salad or a slice of toast.
