Stuffed Peppers

   - 10 - 12 peppers(not to big)
   - 750g mince
   - 1 egg
   - 2 onions
   - 1 carrot
   - 2 tbsp rice
   - parsley
   - salt and pepper
   - 4-5 tomatoes or tomato puree(you can use canned tomatoes)
   - 1/2 tsp plain flour
   - sour cream
  Remove the stalk and the seeds from the peppers, wash them with some cold water and leave them to dry.

       In a separate bowl put the mince, the onion finely chopped, the grated carrot (save some onion and carrot for the sauce),the egg, the rice, salt and pepper, the egg, half of the chopped parsley and then mix everything together(I had the mince already made in the freezer from when I made sarmale a few weeks ago)

 Stuff the peppers with the meat mixture and if you are using tomatoes, cut 2-3 tomatoes in slices, one slice for each pepper. Use the tomatoes slices as a lid for the peppers. I preferred to stuff my tomatoes.

     Fry the rest of the onion and carrot in a bit of  oil, when the onion is transparent add the flour and mix everything together very well.

      In the meantime put the tomatoes in boiled water for 1 minute and then peel the skin off and press them down with a fork until soft. Mix the tomatoes with a cup of water and add them to the onion. Leave it to boil for 1 minute.

      Put the peppers in a pot and add the tomatoes with the onion until the peppers are covered(if needed add some more water) and put it to the boil. Add more salt if needed.

      When the peppers and the meat are boiled add the rest of the chopped parsley and take it off the boil. Serve with sour cream.
